About Tomas

Tomas spent his twenties working the bar in neighborhood cafés across three cities, which is where the argument that runs through this whole site started: the grinder is the gift, and the machine is only the part that gets photographed.

He writes about the distance between what a coffee product promises on its box and what somebody will still be reaching for on a Tuesday in February — the burr shape, the spout, the thing that fits on the counter they actually have.

Standing interests: the case for a printed roast date, the moka pot as an underrated gift, and a long-running argument with friends about whether anyone needs a second dripper.

How Tomas works

  • Method before product

    Ask how they brew — drip, pour-over, press, moka, espresso — and a thousand possible gifts collapse to about six sensible ones.

  • Upgrade the weak link

    A better grinder lifts everything downstream of it. We say which upgrade is the bottleneck in a given setup and which one is just a nicer object.

  • Figures quoted, never claimed

    When a guide gives a brew temperature or a ratio, it names the source — the SCA, or the manufacturer. We do not report measurements we did not take.
